“Breaded” Chicken and mashed cauliflower
2 cups almond flour
4 large boneless skinless chicken breast
1 head of cauliflower
Slice chicken into strips. Dip into beaten eggs and dredge in almond flour. Cook in preheated pan of coconut oil on medium-high heat. Cook until brown and crisp. (Almond flour can burn easily so watch closely).
Steam cauliflower until tender. Mash by hand or in food processor. Add in cooked, diced bacon and 2-3 chopped green onions for flavor (roasted garlic is good too!).
